Why I love this recipe

Cowboy butter is instant flavor whereever you decide to use it in the kitchen. It can take plain pasta to instant gourmet meal, makes those plain jane steaks turn into steakhouse steak masterpieces, and is perfect for dipping crusty Dutch oven bread on the side of your favorite meals.

It’s fast and easy to whip up and keep on hand in the fridge or freezer and instantly elevates even the most simple meals.

Ingredients

  • unsalted butter – softened to room temperature
  • Dijon mustard – substitute yellow mustard or spicy mustard if you like
  • fresh herbs – chives, parsley, thyme
  • minced garlic
  • lemon juice – you can add lemon zest too for an extra burst of flavor!
  • spices – paprika, salt, ground pepper

If you need to use salted butter, simply omit the salt in the recipe and season to taste after mixing the butter together.

Step by step

Like all compound butter, this cowboy butter recipe is super easy to pull together, the hardest part is waiting for the butter to soften!

Simply mix all the ingredients together in a bowl until blended. I like to use a rubber spatula to press the herbs and seasonings into the butter in the bottom of a large bowl until they are blended (see video below.)

Once the butter is blended together, form the butter mixture into the shape of a log and wrap in plastic wrap. Store in the fridge or freezer until ready to use.

Tips for best results

  • Let the butter soften all the way to room temperature for the easiest mixing.
  • Press the softened butter with a rubber spatula into the mustard, herbs, spices, and lemon juice to slowly incorporate it all together.

Variations

As noted above in the ingredient notes, you can play with the mustard in this recipe to change up the flavor. You can also experiment with the herbs you use as well as the spices.

Want a little more kick? Try adding in some red pepper flakes or cayenne pepper (or both!) for added heat!

Serving suggestions

Cowboy butter takes so many savory foods to the next level! Steak, pork chops, seafood, pastas, vegetables, spread it on garlic bread or melt it and dip, spread on toast, add to whipped mashed potatoes, corn on the cob…truly anywhere you can use butter will get a flavor upgrade with homemade cowboy butter.

Storage

Store cowboy butter in plastic wrap or an airtight container in the refrigerator for up to 5 days.

For longer storage you can freeze the butter, it still tastes just as amazing after thawing! Just shape it into a log, wrap it up tight in a layer of plastic wrap, parchment paper, or wax paper, then pop it into a freezer-safe bag or container. It’ll keep beautifully in the freezer for up to 4 months. When you’re ready to use it, just move it to the fridge and let it thaw overnight.

If you’re using fresh herbs, just know they might lose a bit of their bright color or crisp texture after freezing. But no worries—the flavor stays locked in thanks to the butter acting as a natural shield. For best results, chop your herbs finely before mixing, wrap the butter well, and always thaw it slowly in the fridge to keep everything creamy and delicious.
