It's been a few weeks now that I've been eating "clean" and I have to tell you-I feel great! For the most part my sweet tooth has been under control but I'm not going to lie-I still need my chocolate fix every now and then!

After making my chocolate banana skinny "ice cream" and caramelized bananas a couple of weeks ago I was ready to branch out into the fabulous world of low calorie cookies.  These banana oatmeal cookies taste absolutely amazing and you can add anything you want to customize them-who knew cookies could actually be healthy?

    Why I love this recipe

    • can be breakfast, snack, or dessert
    • low calorie
    • gluten free
    • healthy carbs and sweet banana make this a filling snack

    Ingredients:

    • 3 ripe bananas
    • 1.5 cups quick oats
    • add ins of your choice-I used ½ cup dark chocolate chips and 4 tablespoon PB2
mashing a banana in glass bowl

    Step by step

    1. Preheat the oven to 350 degrees and generously spray a cookie sheet with nonstick spray.
    2. In a large bowl mash bananas together with oats until a thick dough is formed.
    3. Add in any additional ingredients you want (like chocolate chips!)
    4. Drop by spoonfuls onto the prepared cookie sheet.
    5. Bake the cookies for 15 minutes.

    Tips for best results

    • use over ripe fresh bananas, the more brown speckles on your banana, the better!
    • do not use bananas that have been frozen previously
    • these cookies don't spread so make the spoonfuls the size you want the cookie to be
    • the cooking time is for 24 small tablespoon-ish sized cookies, larger cookies may need a few extra minutes of baking time
    • this is a great recipe to freeze for meal prep-store in a freezer bag up to 3 months

    Variations & add ins

    • 4 tablespoons of PB2 for a peanut butter version
    • ½ teaspoon of cinnamon
    • diced apples
    • shredded coconut
    • raisins
    • sliced almonds
    • dried cranberries

I had some strawberry oatmeal packets lying around so we used that, overripe bananas, and a handful of chocolate chips. The kids are the talk of the class during snack time. Second batch was regular oatmeal but we added peanutbutter. Thanks!

Loved these healthy cookies. I’ve made them twice but i used craisins instead of chips second time around and used them as a quick on the go breakfast. I find storing them in the fridge for up to 3 days tastes as good as the day i made them.

I'm not much of a baker so was very glad when I found this recipe. It was very easy to make. I baked for 17 mins. Taste like chocolate banana bread nice and chewy.

Very easy to make. First batch we baked for 15 mins were just a bit underdone so the second tray we baked for 17 mins and came out with a better consistency. This may he our oven. Overall quick, tasty and much healthier cookie.
