Loaded Pulled Pork Baked Sweet Potato



Pulled pork baked sweet potatoes are a hearty and flavorful twist on dinner, combining tender, smoky pork with the natural sweetness of baked potatoes. This is one of my favorite easy dinner recipes, it’s so delicious and filling, I think you’re going to love it!

Pulled pork baked sweet potato combines the best of BBQ pulled pork with the sweetness of a baked sweet potato, topped with gooey cheese and tangy BBQ sauce. It has the perfect blend of sweet and savory, perfect for any meal!

Like our buffalo chicken baked potatoes, the potato soaks up all the wonderful flavors of the smoky meat and toppings while adding its own creamy and sweet texture.

Why I love this recipe

What I love most about this dish is its versatility and how it pleases any crowd. Whether for a family dinner or a casual get-together, it’s always a hit. Also, everyone can customize the toppings to suit their own taste.

Ingredients

  • sweet potatoes – look for large sweet potatoes that are large and evenly sized so they bake evenly
  • pulled pork – buy premade or make smoked or slow cooker pulled pork, this is a great way to use leftovers!
  • shredded cheese – I prefer colby and monterey jack but you can choose your favorite variety
  • unsalted butter – this crisps up the skin on the potato perfectly!
  • BBQ sauce – I like homemade bourbon BBQ sauce or store-bought like Sweet Baby Ray’s
  • toppings – sour cream, pickled jalapeños, chives or green onion, salt & pepper

Step by step

  1. Preheat the oven to 450°F.
  2. Wash and dry the potatoes, then use a fork to poke holes all around them.
  3. Place the potatoes on a rack that sits over a baking sheet. Baste the potatoes with melted butter and sprinkle with salt and pepper.
  1. Bake for about 30 minutes, then baste the potatoes with more melted butter. Bake for another 25 minutes or until fork-tender.
  2. Carefully split the potatoes and lightly fluff the inside of each one with a fork.
  3. Immediately place more melted butter on the inside of the potatoes and sprinkle with a bit more salt and pepper.
  4. Sprinkle each potato with half the shredded cheese, then add half of the pulled pork to each potato.
  1. Drizzle with your favorite BBQ sauce.
  2. Add the jalapenos on top and drizzle sour cream over them.
  3. Garnish with a bit of chopped chives and enjoy!

Tips for best results

  • Don’t skip the butter basting step when baking—it adds a delicious crispiness to the potato skin.
  • You can also make the sweet potatoes in the microwave by piercing them all over with a fork and wrapping in a damp paper towel. Microwave time will depend on the size of the sweet potato, start with 5 minutes and add more time until it is soft. You won’t get the crispy skin but it will still be delicious!

Variations

Make this your own by changing out the toppings – think crispy bacon bits, caramelized onions, or even some avocado slices for a creamy addition. Sounds delicous right?

Storage

These potatoes are best enjoyed freshly assembled, I do not recommend these be stored after adding the toppings.

You can make the sweet potatoes ahead of time and store them in an airtight container for up to 1 week, but keep all the ingredients separated until you’re ready to serve.

  • 2 large sweet potatoes
  • 4 tablespoons unsalted butter
  • 1 cup pulled pork
  • 1/2 cup shredded cheese, Colby & Monterey Jack
  • BBQ sauce
  • sour cream
  • pickled jalapeños
  • 1 tablespoon chives, chopped
  • salt & pepper, to taste

Instructions

  1. Preheat oven to 450°F.
  2. Wash and pat dry the sweet potatoes. Use a fork to pierce the potatoes around all sides.
  3. Place the potatoes on a wire rack sitting on a baking sheet. Use a pastry brush (affiliate link) to baste the potatoes generously with melted butter. Sprinkle with salt and pepper.
  4. Bake the potatoes for 30 minutes, then baste again with melted butter. Return to the oven and bake an additional 25 minutes or until potatoes are fork-tender.
  5. Carefully slice the potatoes through the middle and fluff the interior with a fork. Brush with butter, season with salt and pepper, then top with shredded cheese. 
  6. Add 1/2 cup of pulled pork to each potato, then top with barbecue sauce, jalapeños, sour cream, and chives.
