Description

Crispy Cauliflower Bites are a fun way to turn simple cauliflower into something special. The florets are coated, fried, and served with a fresh yogurt sauce for easy flavor. This recipe is quick to make and full of crunch.


Ingredients

For the Cauliflower Bites:

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 1/2 cup all-purpose flour
  • 1 cup cornmeal
  • 3 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

For the sauce:

  • 2 cups plain yogurt
  • 2 garlic cloves, grated
  • 1 small bunch of fresh dill chopped
  • salt to taste

Instructions

  1. In a medium bowl, combine yogurt, dill, garlic, and salt to taste. Mix well and refrigerate while you prepare the cauliflower bites.
  2. Break the cauliflower into florets. Heat a large pot of water until it boils.
  3. Add the cauliflower and cook until slightly tender. Drain and allow to dry.
  4. Heat a deep pan with your choice of fat (vegetable oil or lard) to about 330F.
  5. Pour the flour and cornmeal each into a shallow dish or plate. Add the garlic powder, paprika, salt, and pepper to the flour and mix.
  6. In a bowl or deep dish, beat the eggs until uniform.
  7. Roll each cauliflower floret first in the flour, then in the egg, and finally in the cornmeal.
  8. Fry on each side for 1-2 minutes or until golden brown.
  9. Serve warm. Sprinkle with fresh dill and serve with the yogurt sauce.
