What is acorn squash?

Acorn squash is a type of winter squash known for its small, acorn-like shape. It’s typically dark green on the outside with deep ridges, although there are also varieties with orange or yellow skin. It can usually be found in the grocery store from early fall to late winter. The flesh inside is sweet, nutty, and bright orange in color. Acorn squash is often used in cooking and can be roasted, baked, steamed, or mashed. It’s a versatile vegetable that can be a side dish, part of a main course, or even used in soups and stews.

How to cut an acorn squash

Cutting acorn squash can be a bit challenging due to its tough outer skin and unique shape, but here are some essential tips to make the process easier:

halved acorn squash with seeds scooped out on cutting board with knife and spoon
  1. Safety First: Use a sharp knife and make sure your cutting board is stable to prevent accidents.
  2. Prep the Squash: Wash the squash thoroughly and dry it. You can also microwave it for a minute or two to soften the thick skin slightly, which makes cutting easier.
  3. Cutting the Ends: If needed, start by cutting a small slice off both ends of the squash. This creates flat surfaces that make it more stable to work with.
  4. Slice in Half: Stand the squash on one of its cut ends and carefully cut it in half lengthwise. This will give you two halves with a flat bottom.

Step by step

  1. Slice the acorn squash in half and scoop out all the seeds as described above. If desired, line the slow cooker with parchment paper or a slow cooker liner for easy cleanup.
  2. Pour a half cup of water into the bottom of the slow cooker.
  3. Place the squash in the slow cooker, cut side up.
  4. Top the squash halves with the cinnamon, nutmeg, and brown sugar. Place 1 tablespoon of butter in the middle of each squash.
  5. Cook on high for 3-4 hours.

Variations

Give this crockpot acorn squash recipe a more savory taste instead of sweet by brushing the cut acorn squashes with olive oil or melted butter and sprinkling with seasonings such as chili powder, garlic powder, onion powder, or simply salt and pepper. Either option is an amazing flavor combo.

You can also substitute the water in this recipe for vegetable broth, apple cider, or other cooking liquid of your choice to change up the flavor slightly and make it your own.

Serving suggestions

Serve this sweet acorn squash with a savory main like steakhouse-style steak, oven-baked chicken thighs, or baked pork chops for a hearty and healthy meal. Make it even sweeter by drizzling it with a little maple syrup before serving.

Storage

Store leftovers in an airtight container in the refrigerator up to 3 days. Reheat at 50% power in 1-2 minute intervals in the microwave. To reheat in the oven place in an oven-safe dish and cover with foil. Bake at 350 degrees for 15-20 minutes or until heated through.
