Description

Crock Pot Acorn Squash is an easy way to prepare this tasty veggie. Make this easy side dish with just 5 minutes of prep time, perfect for busy weeknights!


Ingredients

  • 2 acorn squash
  • 1/2 cup water
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/3 cup light brown sugar
  • 4 tablespoons unsalted butter

 


Instructions

  1. Slice the acorn squash in half and scoop out all the seeds. If desired, line the slow cooker with parchment paper or a slow cooker liner for easy cleanup.
  2. Pour a half cup of water into the bottom of the slow cooker.
  3. Place the squash in the slow cooker, cut side up.
  4. Top the squash halves with the cinnamon, nutmeg, and brown sugar. Place 1 tablespoon of butter in the middle of each squash.
  5. Cook on high for 3-4 hours or until squash is fork tender.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat at 50% power in 1-2 minute intervals in the microwave. To reheat in the oven place in an oven-safe dish and cover with foil. Bake at 350 degrees for 15-20 minutes or until heated through.
