Crock Pot Acorn Squash is an easy way to prepare this tasty veggie. Make this easy side dish with just 5 minutes of prep time, perfect for busy weeknights!

- 2 acorn squash
- 1/2 cup water
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/3 cup light brown sugar
- 4 tablespoons unsalted butter
Instructions
- Slice the acorn squash in half and scoop out all the seeds. If desired, line the slow cooker with parchment paper or a slow cooker liner for easy cleanup.
- Pour a half cup of water into the bottom of the slow cooker.
- Place the squash in the slow cooker, cut side up.
- Top the squash halves with the cinnamon, nutmeg, and brown sugar. Place 1 tablespoon of butter in the middle of each squash.
- Cook on high for 3-4 hours or until squash is fork tender.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat at 50% power in 1-2 minute intervals in the microwave. To reheat in the oven place in an oven-safe dish and cover with foil. Bake at 350 degrees for 15-20 minutes or until heated through.
