With a husband who works from home and three ravenous tween and teen boys, I’m always on the lookout for easy, nutritious breakfast ideas. I especially love things I can make ahead of time, so they are grab-and-go, like breakfast burritos.
When I was walking into my local Publix recently and picked up the Extra Savings flyer in the kiosk at the entrance, I saw the “Be Heart Healthy” promotion and was excited to see many of my favorite breakfast burrito ingredients included in the promotion! I knew it was a sign for me to restock my freezer breakfast stash!
Hint: If you can’t find the Extra Savings flyer at the kiosk at the store entrance you can always ask for one at customer service. You can also look for the shelf signs around the store to help you find the products and get the savings! Or you can access the offers online and check out the savings there!
The “Be Heart Healthy” promotion runs from February 13th through February 26th, 2021. The ingredients for this recipe have amazing savings on them, including:

How to Make and Freeze Breakfast Burritos
What you’ll need:
- Eggland’s Best Egg Whites
- Green Giant Spinach
- La Tortilla Factory Wraps (I used the gluten-free and spinach-kale-chard varieties)
- Ham cubes
- Cheese: shredded Mexican and mozzarella
- Pico de gallo
- Avocado
- Parchment paper for wrapping
To make the burritos, I first scrambled my egg whites and then set up an assembly area. I made two kinds: one with egg whites, ham cubes, mozzarella cheese, and spinach and the other with egg whites, pico de gallo, Mexican cheese, and avocado.
Arrange all of your ingredients in the very middle of the wrap, then fold as shown below.
Hint: If your wrap isn’t very flexible and wants to tear, pop it in the microwave for 10-15 seconds first.
Wrap the burritos in parchment paper by placing in the middle of the paper, folding both sides in, then rolling the burrito up. Make sure to label the parchment paper with which flavor it is!
Place the wrapped burritos in a single layer on a baking sheet and place in the freezer for 2 hours or until completely frozen, this helps them to freeze evenly. Transfer the burritos to a large freezer bag and store in the freezer for up to 3 months.
To reheat the burritos, simply unwrap and place on a microwave-safe plate. Cover the burrito with a damp paper towel and microwave for 1 minute and 30 seconds. Check the burrito and if needed continue to heat at 30 second intervals until heated through.
Tips:
- Customize the burritos for your family by experimenting with a variety of cheeses, adding your favorite toppings, changing the meat inside, or changing the flavors of the wraps
- Microwaving the burrito too long when reheating will cause it to come out hard. Be sure to check it every 30 seconds after the first minute and a half.
I love that these burritos are so easy to make ahead of time and can go from freezer to ready to eat in just minutes. They are the perfect solutions to getting a good meal on even the busiest mornings!
