Growing jalapeños in my garden each summer is an absolute must, we are huge fans of spicy foods at our house! While I've had the traditional breaded and fried jalapeño peppers in restaurants I much prefer this baked bacon wrapped version better. It's loaded with creamy cheese that perfectly balances out the spice for a game day or party appetizer everyone will love!
How to Make Jalapeño Poppers
The key to making amazing jalapeño poppers is to pick good jalapeños of course! Choose large jalapeños that are 3-4 inches long so there is plenty of rooms for all that delicious cheese. Cut the jalapeños in half lengthwise and scrape out the inside. Removing the seeds and membranes cuts down on the heat of the pepper and makes it less spicy.
Next you will whip up the cheese filling! Mix cream cheese with diced green onion in a food processor until blended.
Before baking, wrap each jalapeño popper with a 3" piece of bacon. Then simply pop in the oven! You can also prep these ahead of time and refrigerate up to 8 hours before baking for simple party prep!

- Wear plastic gloves when handling jalapeños.
- For a recipe variation, substitute one of the packages of cream cheese with half a cup of shredded cheddar cheese.

Ingredients
- 20 Fresh Jalapeños
- 2 8 oz packages Cream Cheese, Softened
- 4 tbsp Finely chopped Green Onion
- 1 16 oz package Thick Cut Bacon, uncooked and sliced in 3" pieces
Instructions
- Preheat the oven to 375 degrees.
- Cut jalapeños in half and scoop out inside, removing all seeds and membranes.
- In a food processor, combine cream cheese and green onions until well blended.
- Fill jalapeño halves with cream cheese mixture.
- Wrap each filled jalapeño with a bacon piece and secure with a toothpick.
- Place on a rack over a baking sheet and cook for 25 minutes. Serve warm.
