Almondine or amandine is a French term for any dish garnished with almonds. It features crisp green beans, toasted sliced almonds, and the perfect blend of butter, garlic, and lemon to season it to perfection.

  • fresh green beans – French green beans (called haricot verts) are best if you can find them
  • unsalted butter
  • sliced almonds
  • garlic
  • lemon juice
  • salt and pepper

Step by step

  1. Bring a large pot of salted water to a boil. Add the green beans and cook for 3-4 minutes. While the beans are cooking prepare a large bowl with ice water.
  2. Remove the green beans from the boiling water and plunge them into the ice bath. Let them sit for one minute then drain.
  3. Melt butter in a large skillet or sauté pan over medium heat. Reduce heat to low and add the sliced almonds. Toast almonds for 2-3 minutes, stirring often, until toasted. Remove almonds and set aside.
  4. Add garlic and blanched green beans to the sauté pan. Cook for 2-3 minutes or until the beans are heated through.
  5. Remove from heat and toss with toasted crunchy almonds and a healthy squeeze of lemon juice then season with salt and pepper to taste.
