Ohmygoodness y’all….today’s recipe almost didn’t make it to the blog. This dark chocolate toffee recipe was SO good, it almost got eaten up before I could take pictures!
I intended this to be part of my Christmas gifts for family (I always bake for extended family) but I happened into the kitchen to get ready to take pictures and package it up and caught my husband and kiddos going to town! After {nicely} shooing them away I managed to save most of the batch but I have no doubts it would have been gone soon if I hadn’t interrupted the snacking session! (I may have had a few pieces myself!)
Why I love this recipe
If you’re intimidated by candy making please don’t be scared to try this recipe-no candy thermometer is required! It’s easy and requires only about 20 minutes of your time and I promise-the results are worth it! Just follow these step by step instructions. (printable recipe at the bottom of the post)
Ingredients
- 1 cup walnut halves & pieces
- 1 cup butter
- 1 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- 1 (12 oz.) package dark chocolate milk chocolate chips (2 cups)
- 1/4 cup finely chopped pecans
Step by step
- Line a 13 by 9″ casserole dish with aluminum foil. Arrange walnuts in a single layer.
- In a heavy saucepan, combine sugar, butter, vanilla, and salt. Heat on medium-high until butter is totally melting, stirring constantly with a wooden spoon. The mixture will start to appear frothy, continue cooking and stirring for approximately 10 minutes until the mixture is the color of the walnuts.
Expert tip: It is very important to stir constantly-consider the arm workout payment in advance for the tasty snack you’re about to get to eat!
- Immediately pour candy in the dish, covering all nuts. The candy will begin to harden quickly, tilt the pan to move the liquid around to cover the nuts if necessary-speed is the key here!
- Sprinkle chocolate chips over the candy and let sit for 1-2 minutes until soft.
- Use a spatula to spread chocolate over the candy and nut mixture.
- Sprinkle with pecans. Let candy cool until hardened. Once chocolate is firm remove foil from pan and break into pieces. Store in a tightly covered container in cool place or refrigerator.
Storage
Store the toffee in an airtight container at room temperature for up to a week or two weeks if stored in the refrigerator. Freeze in a freezer bag or freezer-safe container (affiliate link) for up to 3 months.

one word…wow!! this was awesome! thanks so much for sharing…I made a batch to give to coworkers but ended up having to make two because I ate so much for the first batch!
I love toffee, but mine is not hardening up. 🙁 Guess I might have cooked it too long. It was too thick to pour, I did the 10 minutes exactly. I am sure people will still eat it.
