My Reuben Dip is the ultimate comfort food appetizer, loaded with Swiss cheese, corned beef, and sauerkraut for that signature Reuben flavor. It’s perfect for dunking crackers, bread, or veggies.

  • 8 ounces cream cheese
  • 8 ounces deli sliced corned beef, chopped
  • 1 1/2 cups shredded Swiss cheese
  • 1/2 cup sauerkraut, drained and pressed dry with a paper towel
  • 1/4 cup sour cream
  • 1/4 cup Thousand Island dressing
  • sliced green onions for topping, optional
  • Triscuits for serving, or your favorite cracker or crusty bread

  1. Preheat the oven to 400°F.
  2. In a large mixing bowl, beat the cream cheese until smooth.
  3. Add the corned beef, shredded cheese, sauerkraut, sour cream, and dressing, and mix until well combined.
  4. Spray a small baking dish or pie plate with non-stick spray, and spread the dip mixture into the bottom of the pan.
  5. Bake for 15-20 minutes, until the cheese is melted, bubbly, and golden brown in spots.
  6. Serve warm with crackers, crusty bread, or your favorite dippers. Enjoy!
