These delicious Pumpkin Cheesecake Bars combine the indulgence of cheesecake with the autumn flavors of pumpkin pie, all on a mouth-watering buttery graham cracker crust!

  • 12 chocolate or regular graham crackers
  • 2 tablespoons sugar
  • 8 tablespoons unsalted butter, melted


  • 16 oz cream cheese, softened
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/4 teaspoon vanilla extract
  • 1 cup pumpkin purée
  • 1 teaspoon pumpkin pie spice
  • whipped cream for topping (optional)


  1. Preheat oven to 350 and place rack in the middle of the oven.
  2. Line 13 by 9 inch dish with parchment paper or foil, leaving overhang on edges. Spray with nonstick spray.
  3. In a food processor pulse graham crackers until finely crumbed, transfer to a medium bowl.
  4. Add butter and sugar and stir and until crumbs are moistened.
  5. Press into the dish with the back of a measuring cup or large spoon to make a tight, even layer. Bake 12 minutes. Remove from oven.
  6. Meanwhile, in a stand mixer (affiliate link) or large bowl with an electric handheld mixer, beat cream cheese until smooth, about 30 seconds, scraping bowl as needed.
  7. Add sugar and salt then mix an additional 30 seconds.
  8. Scrape the bowl, reduce speed, and add eggs one at a time until just blended.
  9. Add vanilla and pumpkin pie spice and beat until smooth on low.
  10. Pour filling over crust and gently smooth.
  11. Bake until edges are firm and middle wobbles, about 20 minutes.
  12. Let cool on rack and refrigerate at least 4 hours. Remove by pulling up parchment paper. Slice into 24 squares. Serve topped with whipped cream. 


Refrigerate leftovers.
