Description

This Copycat Mellow Mushroom Pizza Dough Recipe is easy to make at home with the signature crust. Pair it with Mediterranean toppings for the perfect Mellowterranean pizza.

  • 1 1/2 cups very warm water
  • 1 tbsp olive oil + extra for brushing crust
  • 2 1/2 tbsp molasses
  • 4 tsp active yeast
  • 3 1/2 cups flour
  • 4 tsp active wheat gluten
  • 2 tsp salt
  • cornmeal
  • minced garlic
  • mozzerella cheese
  • cooked, chopped chicken breast
  • 1 red onion, chopped
  • 3/4 cup crumbled feta cheese
  • garlic butter, melted (optional)
  • parmesan cheese (optional)

  1. In a small bowl, combine the water, olive oil, and molasses. Set them aside.
  2. In a stand mixer (affiliate link), combine the flour, gluten, yeast, and salt.
  3. Add the water mixture to the stand mixer (affiliate link) and mix on low using a dough hook for 30-60 seconds until combined. 
  4. Switch the speed to medium and knead for 12 minutes. Form the dough into a ball and place it in a greased bowl.
  5. Cover the bowl with loose plastic wrap and let it sit at room temperature for 2 hours.
  6. Cut the dough in two and roll each piece into a tight ball by folding the edges into the center. Allow the dough to rest covered for 30 minutes.
  7. Preheat the oven to 450°F.
  8. Form each ball into a crust by stretching the dough in two hands while rotating it.
  9. Brush the crust with olive oil and add minced garlic. Top with chicken, onions, feta, and mozzarella cheese. Bake for 7 – 9 minutes until golden.
  10. After removing from the oven, immediately brush the crust with melted garlic butter and top with parmesan cheese if desired.
