Description
Cinnamon Apple Oatmeal Cookies are the perfect snack for fall (or anytime) Hearty, thick and flavored with apples and cinnamon.

- 2 small gala apples, finely chopped, about 1 3/4 cups
- 1 tablespoon granulated sugar
- 2 1/2 teaspoons cinnamon, divided
- 1 cup unsalted butter, softened
- 1 cup packed dark brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all purpose flour
- 3 cups old fashioned oats
Instructions
- Preheat oven to 350 degrees.
- In a small bowl combine apples, granulated sugar and 1 teaspoon cinnamon. Mix well to coat apples and set aside.
- In a large bowl combine butter and brown sugar. Beat until light and fluffy.
- Add eggs and vanilla and continue to beat until combined.
- In a separate bowl combine baking soda, salt, remaining cinnamon, and flour.
- Pour flour mixture slowly into batter and mix until combined.
- Stir in oatmeal.
- Add apples, including any juices that may be at the bottom of the bowl.
- Drop in rounded tablespoons on an ungreased cookie sheet 2″ apart.
- Bake for 10-12 minutes or until golden.
- Allow to cool one minute before removing to a wire rack.
