Description

Cinnamon Apple Oatmeal Cookies are the perfect snack for fall (or anytime) Hearty, thick and flavored with apples and cinnamon.


Ingredients

  • 2 small gala apples, finely chopped, about 1 3/4 cups
  • 1 tablespoon granulated sugar
  • 2 1/2 teaspoons cinnamon, divided
  • 1 cup unsalted butter, softened
  • 1 cup packed dark brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all purpose flour
  • 3 cups old fashioned oats

Instructions

  1. Preheat oven to 350 degrees.
  2. In a small bowl combine apples, granulated sugar and 1 teaspoon cinnamon. Mix well to coat apples and set aside.
  3. In a large bowl combine butter and brown sugar. Beat until light and fluffy.
  4. Add eggs and vanilla and continue to beat until combined.
  5. In a separate bowl combine baking soda, salt, remaining cinnamon, and flour.
  6. Pour flour mixture slowly into batter and mix until combined.
  7. Stir in oatmeal.
  8. Add apples, including any juices that may be at the bottom of the bowl.
  9. Drop in rounded tablespoons on an ungreased cookie sheet 2″ apart.
  10. Bake for 10-12 minutes or until golden.
  11. Allow to cool one minute before removing to a wire rack.
