Apple Oatmeal Cookies

Description

Cinnamon apple oatmeal cookies are an ideal snack for fall or any time of the year. They are thick and hearty, with a delicious apple and cinnamon flavor. They are easy to make and great with any fall drinks!


Ingredients

  • 2 small gala apples, finely chopped (about 1 3/4 cups)
  • 1 tablespoon granulated sugar
  • 2 1/2 teaspoons cinnamon, divided
  • 1 cup unsalted butter, softened
  • 1 cup packed dark brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 3 cups old-fashioned oats

Instructions

  1. Start by preheating your oven to 350ยฐF (175ยฐC).
  2. In a small bowl, combine the apples, granulated sugar, and 1 teaspoon of cinnamon. Mix well to coat the apples and set aside.
  3. In a large bowl, combine the butter and brown sugar. Beat until light and fluffy.
  4. Add the eggs and vanilla extract, and continue to beat until well combined.
  5. In a separate bowl, mix the baking soda, salt, remaining cinnamon, and flour.
  6. Gradually add the flour mixture to the butter mixture, mixing until combined. Stir in the oatmeal.
  7. Fold in the apples, including any juices that may have been collected at the bottom of the bowl.
  8. Drop rounded tablespoons of dough onto an ungreased cookie sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are golden.
  10. Let the cookies cool on the sheet for one minute, then transfer them to a wire rack to cool completely. Enjoy!

Notes

Store cookies in an airtight container at room temperature for up to a week.ย 

These cookies freeze well, simply allow to cool completely then trasnfer to a freezer bag and freeze up to 3 months. Thaw at room temperature.
