Thin Mint Brownies

Description

Rich, fudgy homemade brownies are topped with a chocolate frosting and crushed Thin Mint cookies for a simple yet indulgent treat!


Ingredients

  • 1 cup butter, melted
  • 2 tablespoons maple syrup
  • 4 eggs
  • 2 cup white sugar
  • 1/2 cup cocoa
  • 1 3/4 cup flour
  • 1/2 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 12 oz . whipped chocolate frosting
  • 1 sleeve (about 16 cookies) Thin Mint cookies, crushed

Instructions

  1. Preheat oven to 350 degrees. Spray a 9 by 11 inch baking pan with nonstick spray.
  2. In a large mixing bowl combine butter, eggs and maple syrup.
  3. Add cocoa, sugar, flour baking powder and salt and stir on low until combined.
  4. Pour into prepared dish and bake for 25 minutes.
  5. Allow to fully cool before frosting.
  6. Stir frosting well and spread over brownies. Top with crushed cookies.

Notes

Store brownies in an airtight container at room temperature for up to 5 days. 

Freeze brownies by wrapping in two layers of aluminum foil and one layer of plastic wrap and keep in the freezer up to 3 months. Thaw at room temperature overnight.
