Ingredients
- 2 tablespoons unsalted butter
- 5 cups frozen corn, thawed and drained
- 1/2 cup heavy cream
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground pepper
- pinch cayenne pepper
- pinch ground nutmeg
- 1 cup milk
- 3 tablespoons all-purpose flour
Instructions
- In a medium saucepan, melt butter over medium heat. Add corn, cream, sugar, salt, pepper, cayenne pepper, and nutmeg. Stir to mix.
- In a separate bowl or glass measuring cup, combine milk and flour. Pour milk mixture into the saucepan and stir.
- Continue to cook, stirring continuously, for 5 minutes or until thickened and corn is cooked through.
- Season to taste with additional spices if desired.
Notes
If you are using fresh corn cut from the cob, double the butter and increase the cooking time to 15 minutes or until corn is cooked through.
If using canned corn drain the corn of all excess moisture before adding to the pot.
Store leftovers in an airtight container in the refrigerator up to 3 days. Reheat on medium-low heat on the stovetop or on 50% power in the microwave.
