Slow Cooker Turkey Noodle Soup

Description

Get ready for a fuss-free, belly-warming meal with our slow-cooker turkey noodle soup. This recipe is as easy as it gets, and the result is pure comfort in a bowl. Just toss in some leftover turkey, veggies, and noodles, set it, forget it, and come home to a steaming, delicious bowl of goodness.


Ingredients

  • 3 cups chopped or shredded turkey
  • 3 medium carrots, peeled and sliced
  • 2 stalk celery, sliced
  • 1 medium yellow onion, diced
  • 8 cups turkey or chicken broth
  • 2 teaspoons garlic powder
  • 2-3 sprigs fresh thyme or 1/2 teaspoon dried thyme
  • salt and ground black pepper to taste
  • 8 ounces wide egg noodles

Instructions

  1. Add all ingredients except egg noodles to a slow cooker and stir to mix.
  2. Cook on high 3 hours or low 6 hours.
  3. Add egg noodles to the slow cooker and cook for 15 minutes on high or until noodles are al dente.

Notes

Don’t overcook the noodles, if you leave them too long they absorb too much liquid and will get mushy.

You can use chicken broth or store-bought or homemade turkey broth for this recipe. You can also substitute vegetable broth if needed. Depending on the broth you use, you may want to adjust the seasoning with different spices for a deeper flavor. Homemade broth usually has a more complex flavor profile while store-bought broths tend to have more salt. If your broth seems bland try adding bay leaves, fresh garlic, or poultry seasoning to add additional flavor.
