Ingredients

  • 2 lbs (4 pieces) of chicken breast
  • 1 cup reduced sodium soy sauce
  • 1/2 cup honey
  • 1/4 cup hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 6-8 cloves of garlic, grated
  • 2 scallions, chopped
  • 1 tsp sesame seeds
  • 1/4 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste

Instructions

  1. Prepare Ingredients: Grate your garlic and chop the scallions.
  2. Combine Ingredients in Slow Cooker: In your slow cooker, add the chicken breast, reduced sodium soy sauce, honey, hoisin sauce, grated garlic, rice vinegar, toasted sesame oil, salt, and black pepper. Stir until well combined.
  3. Cook Chicken: Cook in the slow cooker for 3-4 hours on high or 6-7 hours on low. Halfway through cooking, flip the chicken breast over to ensure even cooking.
  4. Shred Chicken: Once fully cooked, shred the chicken using a hand mixer for easy shredding.
  5. Serve: Serve the shredded chicken with rice, and top with chopped scallions and sesame seeds for added flavor and garnish.
