Description

Slow Cooker Sweet Potatoes with Bacon are a savory side dish that takes just ten minutes of prep time and 3 hours in the Crock Pot!


Ingredients

Units Scale
  • 2-3 large sweet potatoes sweet potato
  • 1/2 cup orange juice
  • 3 tablespoons brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • 2 tablespoons butter, cut up
  • 4 slices bacon cooked and crumbled

Instructions

  1. Cut sweet potatoes into 1/2 inch cubes. You may peel them if you like but I prefer to leave the peels on mine.
  2. Place all the sweet potatoes in the slow cooker.
  3. In a small bowl combine orange juice, brown sugar, salt, sage and thyme.
  4. Mix well and pour over potatoes.
  5. Cut butter into small pieces and place over the potatoes.
  6. Cook on low 5-6 hours or high 3 hours.
  7. Serve topped with crumbled bacon.

Notes

  • be sure to thoroughly wash your sweet potatoes before chopping if leaving the skin on
  • experiment with the herbs to change up the flavor and make the recipe your own!
  • skip the bacon crumbles to make this dish vegetarian
  • skip bacon and use plant butter to make it vegan
