- 1 lb lean ground beef, use 93/7 and you won’t need to drain any grease
- 1 medium onion, diced
- 1 teaspoon oregano
- 3 cups cabbage, chopped
- 14.5 oz can tomatoes, diced
- 8 oz can tomato sauce
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 32 ounces beef broth
- 3 cups minute rice, cooked
Instructions
- Dice the onion and chop the cabbage.
- In a medium skillet, cook the ground beef with the diced onion and oregano over medium heat, breaking the meat up as you cook it, until the meat is browned. Drain if necessary.
- In a crockpot, combine the cabbage, cooked meat, diced tomatoes, and tomato sauce. Season with salt and pepper, and pour in the beef broth. Cook on high for 2 hours or low for 5 hours.
- About 30 minutes before the soup is finished cooking cook the rice according to package instructions.
- Add the cooked rice to the soup and stir. Serve hot.
