Description

Roasted Baby Potatoes are the perfect side dish. Crispy outside, tender inside, and packed with flavorful herbs and spices. Easy to make and incredibly tasty, they will quickly become a family favorite.


Ingredients

  • 3 pounds red or yellow skinned baby potatoes, wash to remove dirt and dry
  • 3 tbsp avocado oil
  • 6-8 cloves minced garlic, or to taste
  • 2 tsp parsley, chopped
  • 2 tsp thyme, chopped
  • 2 tsp rosemary, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Parmesan, for garnish, optional
  • fresh herbs, for garnish, optional

Instructions

  1. Preheat your oven to 400ยฐF and grease a large rimmed baking tray with non-stick cooking spray.
  2. Slice the washed baby potatoes in half and place them in a large bowl. Toss with avocado oil, minced garlic, chopped herbs, and seasonings until well coated.
  3. Spread the potatoes in an even layer on the prepared baking tray. Bake for 45-55 minutes until the potatoes are golden brown and tender.
  4. Transfer to a serving platter, garnish with Parmesan and fresh herbs if desired, and enjoy!
