Oven Roasted Garlic Confit

Description

Oven-roasted garlic confit is an indulgent spread made by slow-cooking garlic cloves in olive oil until they are soft, golden, and utterly decadent.


Ingredients

Units Scale
  • 8-10 heads of garlic
  • 2 cups olive oil
  • 10-12 sprigs of thyme
  • salt and pepper to taste (optional)

Instructions

  1. Preheat your oven to 275 degrees Fahrenheit.ย 
  2. Cut and remove the top third of the heads of garlic.ย 
  3. Place the garlic in a loaf pan or baking dish and cover with the olive oil.
  4. Add the springs of thyme and spread them between the garlic.
  5. Bake garlic in the oven for 1 hour and 15 minutes.
  6. Remove from the oven and let it cool off for 20 minutes.
  7. Squeeze out the garlic cloves out of each head and transfer to an airtight container.
