Description
Oven-roasted garlic confit is an indulgent spread made by slow-cooking garlic cloves in olive oil until they are soft, golden, and utterly decadent.

- 8-10 heads of garlic
- 2 cups olive oil
- 10-12 sprigs of thyme
- salt and pepper to taste (optional)
Instructions
- Preheat your oven to 275 degrees Fahrenheit.ย
- Cut and remove the top third of the heads of garlic.ย
- Place the garlic in a loaf pan or baking dish and cover with the olive oil.
- Add the springs of thyme and spread them between the garlic.
- Bake garlic in the oven for 1 hour and 15 minutes.
- Remove from the oven and let it cool off for 20 minutes.
- Squeeze out the garlic cloves out of each head and transfer to an airtight container.
