Description

This savory onion tart recipe combines sweet, caramelized onions with a flaky, buttery crust for a simple dish packed with rich flavor. Elegant enough for entertaining but easy enough for a cozy meal at home, it’s delicious served warm or at room temperature.


Ingredients

  • 1 2/3 cups all-purpose flour
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1 egg
  • A pinch of salt
  • 1-2 tbsp cold water
  • 3-4 large onions, about 500 g
  • 2 tablespoons unsalted butter
  • 1/3 cup heavy cream
  • 2 eggs
  • 1 cup shredded cheese, such as Gruyère, Parmesan, or Cheddar
  • Salt and pepper, to taste
  • A pinch of nutmeg, optional

Instructions

  1. In a large bowl, mix the flour, salt, and butter, rubbing the mixture with your fingers until it resembles fine breadcrumbs.
  2. Add the egg and a bit of cold water, then gently knead until the dough comes together and feels smooth.
  3. Shape the dough into a ball, wrap it in cling film, and chill it in the refrigerator for 30 minutes.
  4. Slice the onions into thin half rings.
  5. In a saucepan or skillet, melt the butter over medium heat. Add the onions and and sauté until soft and caramelized (about 20 minutes). Stir frequently to avoid burning.
  6. In a separate bowl, whisk the eggs with the cream. Stir in the cheese, salt, pepper, and a pinch of nutmeg.
  7. Roll out the chilled dough and press it into a 9-inch tart pan, making sure to form the edges. Use a fork to poke holes in the bottom.
  8. Cover the crust with parchment paper and fill with pie weights or dried beans then pre-bake the crust in a preheated oven at 350°F for 10 minutes.
  9. Remove the beans/pie weights and parchment paper and spread the caramelized onions into the crust, then pour the egg and cheese mixture over the top.
  10. Bake at 350°F for another 25-30 minutes, until the filling is golden and set.
  11. Allow the tart to rest 10 minutes before cutting. It’s delicious warm or chilled.
