Description

Pulled pork baked sweet potatoes are a hearty and flavorful twist on dinner, combining tender, smoky pork with the natural sweetness of baked potatoes. This is one of my favorite easy dinner recipes, it’s so delicious and filling, I think you’re going to love it!

  • 2 large sweet potatoes
  • 4 tablespoons unsalted butter
  • 1 cup pulled pork
  • 1/2 cup shredded cheese, Colby &; Monterey Jack
  • BBQ sauce
  • sour cream
  • pickled jalapeños
  • 1 tablespoon chives, chopped
  • salt & pepper, to taste

  1. Preheat oven to 450°F.
  2. Wash and pat dry the sweet potatoes. Use a fork to pierce the potatoes around all sides.
  3. Place the potatoes on a wire rack sitting on a baking sheet. Use a pastry brush (affiliate link) to baste the potatoes generously with melted butter. Sprinkle with salt and pepper.
  4. Bake the potatoes for 30 minutes, then baste again with melted butter. Return to the oven and bake an additional 25 minutes or until potatoes are fork-tender.
  5. Carefully slice the potatoes through the middle and fluff the interior with a fork. Brush with butter, season with salt and pepper, then top with shredded cheese. 
  6. Add 1/2 cup of pulled pork to each potato, then top with barbecue sauce, jalapeños, sour cream, and chives.

Don’t skip the butter basting step when baking—it adds a delicious crispiness to the potato skin.

You can also make the sweet potatoes in the microwave by piercing them all over with a fork and wrapping in a damp paper towel. Microwave time will depend on the size of the sweet potato, start with 5 minutes and add more time until it is soft. You won’t get the crispy skin but it will still be delicious!
