- 1 medium onion, diced
- 2 cloves garlic, minced
- (2) 14-ounce cans diced tomatoes OR 4 cups peeled and diced fresh tomatoes
- 2 cups chicken stock
- 1 teaspoon sugar
- Salt and black pepper, to taste
- ¼–½ cup heavy cream, optional
Instructions
- Melt the butter in a large saucepan over medium heat.
- Add the diced onion and cook gently for 5–7 minutes until soft and translucent.
- Stir in the garlic and cook for 30 seconds until fragrant.
- Add the diced tomatoes, chicken stock, sugar, salt, and pepper.
- Bring to a gentle simmer and cook for 15–20 minutes.
- Blend until completely smooth using an immersion blender (affiliate link) or countertop blender (affiliate link).
- Stir in heavy cream if using. Adjust seasoning and serve warm.
