- 2 boneless, skinless chicken breasts
- 2 bell peppers (red and yellow)
- 1 medium yellow onion
- 2 tablespoons fajita seasoning
- 2 tablespoons olive oil
- 1 cup shredded cheddar cheese
- Optional for serving: flour tortillas, sour cream, diced avocado, chopped cilantro, diced jalapeño, or any of your favorite taco toppings
Instructions
- Preheat your oven to 350°F.
- Dice the chicken breasts into bite-sized pieces. Thinly slice the bell peppers and onion.
- In a large bowl, combine the diced chicken, sliced peppers, and onions. Add the fajita seasoning and olive oil to the bowl. Toss everything together until well coated.
- Spread the chicken and vegetable mixture evenly in a casserole dish. Sprinkle the shredded cheddar cheese on top of the mixture, ensuring even coverage.
- Place the casserole dish in the preheated oven. Bake uncovered for approximately 35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
