Savor this chicken fajita casserole, a juicy chicken, sizzling peppers, and melty cheese baked into one flavorful dish, a Tex-Mex delight!


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 bell peppers (red and yellow)
  • 1 medium yellow onion
  • 2 tablespoons fajita seasoning
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese
  • Optional for serving: flour tortillas, sour cream, diced avocado, chopped cilantro, diced jalapeño, or any of your favorite taco toppings

Instructions

  1. Preheat your oven to 350°F.
  2. Dice the chicken breasts into bite-sized pieces. Thinly slice the bell peppers and onion.
  3. In a large bowl, combine the diced chicken, sliced peppers, and onions. Add the fajita seasoning and olive oil to the bowl. Toss everything together until well coated.
  4. Spread the chicken and vegetable mixture evenly in a casserole dish. Sprinkle the shredded cheddar cheese on top of the mixture, ensuring even coverage.
  5. Place the casserole dish in the preheated oven. Bake uncovered for approximately 35 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  6. Once out of the oven, serve with variety of optional toppings. Enjoy!
