Description

With a soft, chewy center and crispy edges, these brownie cookies are sure to satisfy your sweet cravings. Perfect for any occasion or simply as a delicious indulgence.


Ingredients

  • 8 ounces + 1/2 cup semisweet chocolate chips

  • 1/2 cup butter
  • 3 eggs
  • 1 cup white granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder

Instructions

  1. In a saucepan, melt the butter over low heat. Once melted, add in the first cup of chocolate chips and stir until melted and smooth.
  2. In a mixing bowl, add the melted chocolate mixture and sugars. Mix until well combined.
  3. Crack in the eggs and add the vanilla extract. Mix until fully incorporated.
  4. Fold in the baking powder, flour, salt, and cocoa powder until a thick dough forms.
  5. Stir in the remaining chocolate chips until evenly distributed throughout the dough.
  6. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
  7. Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  8. Using a 2-inch scooper, portion out balls of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. You should fit about 8 cookies per sheet.
  9. Bake in the preheated oven for 11-13 minutes, or until the tops of the cookies are crinkly and the edges are firm.
  10. Allow the cookies to cool on the baking sheet for at least 5 minutes before serving. These brownie cookies are best enjoyed warm and gooey!
