Description

Bacon-wrapped green bean bundles are a delectable side dish that marries the smoky richness of bacon with the crisp freshness of green beans. They are the perfect appetizer for holidays or special occasions.


Ingredients

  • 12 ounce package bacon, strips cut in half
  • 1 pound fresh green beans
  • 2 tablespoons brown sugar
  • salt and pepper

Instructions

  1. Heat your oven to 350°F. Spray a casserole dish or cookie sheet with a light coating of nonstick spray or line it with parchment paper or aluminum foil.
  2. Trim the ends of the green beans.
  3. Take half a slice of bacon and lay it out. Put a small bunch of green beans (about 6 or 7) on the strip and then roll it up into a little bundle.
  4. Put the bundles of green beans into the casserole dish with the seam side facing down. Do this with all the bacon and green beans, and then sprinkle them with lightly brown sugar, salt, and pepper.
  5. Bake in the preheated oven until everything is nicely browned and heated through, around 35-40 minutes.

Notes

The thickness of your bacon and green beans can really affect the baking time for this recipe. Choose thinner green beans and thin-cut bacon for the fastest cooking. If you use thick-cut bacon extend the cooking time and cook on a wire rack for best results and crispy bacon.

You can experiment with the seasoning of the green bean bundles. For a more savory flavor omit the brown sugar and try seasoning with Montreal steak seasoning, garlic powder, garlic salt, or brushing with olive oil or melted butter before baking.

This recipe will result in more crisp green beans. If you prefer tender green beans blanch the beans prior to wrapping the bacon.

It is best to use fresh green beans in this recipe but you can use frozen or canned green beans if necessary. Thoroughly thaw the frozen beans and be sure to dry green beans completely before wrapping them in the bacon.

These are a great side dish to prep ahead of time when entertaining. Simply prep the little bundles and refrigerate until ready to bake. Allow them to sit at room temperature 20 minutes before baking.

Store leftovers in an airtight container in the refrigerator up to 3 days. Reheat in the air fryer or oven for crispy bacon.
