Description

These Almond Snowball Cookies have a nutty flavor that is perfectly coated in powdered sugar. Made with only 6 simple ingredients, these easy cookies are ideal for holiday parties or gifting!

  • 1 stick (1/2 cup) butter, room temperature
  • 1/4 cup confectioner's sugar + 1/2 cup more for rolling and sprinkling on the cookies
  • 1/2 teaspoon of almond extract
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/4 teaspoon salt

  1. Preheat the oven to 400°F and line two baking sheets with parchment paper.
  2. Cream together the butter, powdered sugar, and almond extract until light and fluffy.
  3. In a separate bowl, whisk together the all-purpose flour, almond flour, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until fully incorporated.
  5. Roll the dough into 1-inch balls, if dough is too sticky to roll, add 1-3 more teaspoons of flour. Roll each dough ball in powdered sugar and place on the prepared baking sheets 1 inch apart.
  6. Bake 11-13 minutes or until the edges are just starting to turn a golden brown.
  7. Let the cookies cool 5 minutes, then roll them in powdered sugar again to coat.
  8. Allow them to cool completely on a wire rack. Roll or dust with more powdered sugar once cooled if desired.
