- 1 stick (1/2 cup) butter, room temperature
- 1/4 cup confectioner's sugar + 1/2 cup more for rolling and sprinkling on the cookies
- 1/2 teaspoon of almond extract
- 1 cup all-purpose flour
- 1/2 cup almond flour
- 1/4 teaspoon salt

- Preheat the oven to 400°F and line two baking sheets with parchment paper.
- Cream together the butter, powdered sugar, and almond extract until light and fluffy.
- In a separate bowl, whisk together the all-purpose flour, almond flour, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until fully incorporated.
- Roll the dough into 1-inch balls, if dough is too sticky to roll, add 1-3 more teaspoons of flour. Roll each dough ball in powdered sugar and place on the prepared baking sheets 1 inch apart.
- Bake 11-13 minutes or until the edges are just starting to turn a golden brown.
- Let the cookies cool 5 minutes, then roll them in powdered sugar again to coat.
- Allow them to cool completely on a wire rack. Roll or dust with more powdered sugar once cooled if desired.
