Description
Crispy Southern fried catfish is an easy recipe ready in less than 30 minutes. This tender fish is perfectly seasoned and coated in a tasty cornmeal and flour coating that fries up in a flash.

- vegetable, canola, or peanut oil for frying
- 1 1/2 cups all-purpose flour
- 1 1 /2 cups cornmeal
- 1/2 teaspoon cayenne pepper
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 8 skinless catfish filets (about 5 ounces each)
Instructions
- Fill a deep saucepan with at least 2 inches of oil and heat to 350 degrees.
- Meanwhile, in a wide bowl combine flour, cornmeal, and cayenne pepper. Stir to mix.
- In a small bowl combine the salt, pepper, garlic powder, and onion powder.
- Season both sides of the filets generously with the salt and pepper seasoning mixture.
- Dredge the catfish filets in the flour mixture and carefully place into the hot oil. Cook until golden, about 7 minutes. Remove from the oil with a wide, slotted spatula. Set on a paper towel lined plate to drain.
