- 1 store-bought graham cracker crust
- 2 (3.4 oz.) boxes of vanilla instant pudding mix
- 2 cups milk
- 8 ounces cool whip, plus extra for topping (optional)
- 1/2 teaspoon mint extract
- green gel food coloring
- maraschino cherries for topping, optional
Instructions
- In a large mixing bowl, whisk together instant pudding mix and milk.
- Add the mint extract and a generous amount of green gel food coloring, and whisk until well combined.
- Add the cool whip and mix until well combined. Add a bit more food color, if needed, to get your desired shade of green.
- Pour the mixture into the pie crust, and smooth out evenly.
- Move the pie to the refrigerator to set for at least 4 hours, or overnight.
- Top with cool whip and a maraschino cherry before serving if desired.
