Salad:
- 1/2 red onion
- 1 medium cucumber
- 1/2 cup cherry tomatoes
- 1 red bell pepper
- 1/2 cup kalamata olives
- 2 cans chickpeas
- 1/4 c capers
- 1/2 tsp salt
- 1/8 tsp black pepper
Dressing:
- 5 tbsp olive oil
- 1/4 c white wine vinegar
- 1 tbsp fresh lemon juice
- 1 tbsp fresh parsley
- 1 tbsp fresh basil
- 1 tbsp fresh mint
Topping:
- 1/2 c feta cheese
Instructions
To Make the Salad:
- Slice and chop the red onion, quarter the cucumber, and slice the cherry tomatoes. Place them in a large bowl.
- Remove the stem and seeds from the red bell pepper, slice and chop it, then add to the salad. Halve the olives, ensuring they are pitted.
- Drain and rinse the chickpeas, then add them to the bowl along with the capers, salt, and pepper. Toss all ingredients together until well mixed.
To Make the Dressing:
- In a small bowl, whisk together lemon juice, olive oil, and white wine vinegar. Stir well.ย
- Then, chop the fresh herbs, add to the lemon mixture, and stir again.
- Pour the dressing over the salad and mix well. Sprinkle the top with feta cheese just before serving. Enjoy!
