Old Fashioned Georgia Brunswick Stew

Description

Georgia Brunswick stew is a Southern classic medley of tender chicken, smoky pulled pork, and an abundance of vegetables.


Ingredients

Units Scale
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 large yellow onion, finely chopped
  • 15-ounce can fire roasted tomatoes (undrained)
  • 4 cups chicken stock
  • 1 1/2 cups barbecue sauce (I used Sweet Baby Ray's)
  • 2 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cayenne pepper
  • 1 1/2 pounds smoked pulled pork or pulled chicken
  • 8-ounce package frozen corn
  • 8-ounce package frozen lima beans
  • salt and pepper to taste

Instructions

  1. In a large Dutch oven of heavy pot, melt butter on medium-high heat.
  2. Add garlic and onions and sauté until soft, around 5 minutes.
  3. Mix in tomatoes, chicken stock, BBQ sauce, Worcestershire, brown sugar, cayenne, smoked pork, lima beans, corn, salt, and pepper.
  4. Bring to boil, then lower heat to simmer. Cook for 1 1/2 hours, stirring occasionally.

Notes

Store leftover stew in an airtight container for up to 3 days. Reheat on the stovetop or in the microwave. Freeze in freezer bags or freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator then reheat in the microwave at half power or on the stovetop.
