Description

This Cornbread Cowboy Casserole layers seasoned ground beef, smoky bacon, and ranch-style beans under a golden cornbread topping. Perfect for family dinners or potlucks.


Ingredients

  • 1 lb ground beef
  • 2 tablespoons olive oil
  • 2 (8.5 oz) boxes Jiffy Cornbread Mix, plus ingredients listed on the box
  • 6 slices bacon, cooked and crumbled, plus extra for garnish
  • 1 medium white onion, chopped
  • 1 red bell pepper, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup BBQ sauce
  • 2 tablespoons Worcestershire sauce
  • 1 (15 oz) can ranch-style beans
  • 1 cup shredded cheddar cheese
  • 1 medium jalapeño, sliced
  • Optional: fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Heat oil in a large skillet over medium heat. Add the chopped onion and bell pepper, and cook for about 5 minutes until they begin to soften.
  3. Add the ground beef and cook until browned, about 7–10 minutes. Drain any excess fat.
  4. Stir in the Worcestershire sauce, salt, pepper, garlic powder, and onion powder.
  5. Mix in the crumbled bacon, BBQ sauce, and beans. Stir well, then spread the mixture evenly into the prepared baking dish. Top with shredded cheese.
  6. In a separate bowl, prepare the cornbread batter as directed on the package. Gently pour it over the beef and cheese mixture, spreading it evenly without stirring.
  7. Arrange the jalapeño slices on top.
  8. Bake for 35 – 40 minutes, or until the cornbread is golden and a toothpick inserted in the center comes out clean. Allow to cool for about 10 minutes before serving.
  9. Finish with extra bacon and a sprinkle of fresh cilantro.
