This classic best roast beef sandwich piles tender, sliced roast beef onto a fluffy baguette, spread with rich truffle aioli, and topped with crisp arugula for freshness. It’s a delicious and satisfying option for lunch.

  • 1 baguette
  • 4-6 slices of medium-rare roast beef
  • 2 oz arugula
  • 3 tablespoons truffle aioli
  • 1 oz shaved parmesan
  • 1 oz pine nuts
  • Salt, to taste
  • Black crushed pepper, to taste

Instructions

  1. Roast the Pine Nuts: In a pan over medium-high heat, roast the pine nuts for about 3-4 minutes or until golden brown. Keep a close eye on them to prevent burning. Once done, set them aside to cool.
  2. Prepare the Baguette: Slice the baguette open and spread the truffle aioli evenly on both halves.
  3. Layer the Ingredients: Place the arugula on top of the truffle aioli, followed by the slices of medium-rare roast beef.
  4. Add the Toppings: Sprinkle the shaved parmesan over the roast beef and season with salt and black crushed pepper to taste.
  5. Finish with Pine Nuts: Scatter the roasted pine nuts over the top of the sandwich for a delicious crunchy and nutty flavor.
