Description

These muffins are moist, sweet, and filled with bits of walnut for a delightful crunch in every bite. They are simple to make and perfect for any time of day.


Ingredients

  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2-3 large bananas, mashed
  • 2 large eggs
  • 3 tablespoon milk
  • 1 teaspoon vanilla
  • 2 cups all purpose flour
  • 1 tsp baking soda, scooped and leveled
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon allspice
  • 1/2 chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, cream together butter and sugars until light and fluffy. Add mashed bananas and mix well. Then, beat in the eggs, milk, and vanilla extract until combined (it’s okay if it’s a bit lumpy from the bananas).
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and allspice.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Coat the chopped walnuts in a bit of flour and fold them into the batter.
  5. Spoon the batter into the prepared muffin tin, filling each liner about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove from the oven and let the muffins cool on a wire rack.
