Description

Baked sweet potatoes are easy and nutritious dish with a crispy skin and a fluffy, tender interior. Perfect as a versatile side or a hearty base for your favorite toppings.


Ingredients

Scale
  • 5 large sweet potatoes
  • 1 tablespoon avocado oil
  • kosher salt
  • butter slices, optional toppings
  • chives, optional toppings

Instructions

  1. Preheat your oven to 425ยฐF. Line a baking sheet with parchment paper and set aside.
  2. Rinse and scrub the sweet potatoes to remove any dirt, then dry them thoroughly.
  3. Using a dinner fork, poke holes around each potato. Place them onto the prepared baking tray.
  4. If you enjoy crispy skins, rub a little oil over each potato and sprinkle with salt. You can add additional seasonings if you like.
  5. Bake the potatoes for 40-50 minutes, or until they are fork-tender. If needed, cook for an additional 5 minutes and check again.
  6. Once the potatoes are tender, slice them lengthwise and gently spread them apart.
  7. Serve with slices of butter, sour cream or Greek yogurt, and garnish with chives if desired. Enjoy!
