- 5 large sweet potatoes
- 1 tablespoon avocado oil
- kosher salt

Instructions
- Preheat your oven to 425ยฐF. Line a baking sheet with parchment paper and set aside.
- Rinse and scrub the sweet potatoes to remove any dirt, then dry them thoroughly.
- Using a dinner fork, poke holes around each potato. Place them onto the prepared baking tray.
- If you enjoy crispy skins, rub a little oil over each potato and sprinkle with salt. You can add additional seasonings if you like.
- Bake the potatoes for 40-50 minutes, or until they are fork-tender. If needed, cook for an additional 5 minutes and check again.
- Once the potatoes are tender, slice them lengthwise and gently spread them apart.
- Serve with slices of butter, sour cream or Greek yogurt, and garnish with chives if desired. Enjoy!
