This autumnal salad with bacon vinaigrette is a delightful mix of fresh apples, crispy bacon, and glazed pecans, all drizzled with a homemade bacon vinaigrette for a sweet and savory salad no one can resist!


Ingredients

Salad Ingredients:

  • 4 cups spring mix
  • 1/2 cup cooked quinoa
  • 4 slices bacon
  • 2 honeycrisp apples
  • 1/4 cup goat cheese
  • 1/4 cup glazed pecans
  • 1/4 cup dried cranberries

Bacon Vinaigrette Ingredients:

  • 2 tbsp bacon grease
  • 1 tbsp red wine vinegar
  • 1 tbsp dijon mustard
  • 2 tbsp maple syrup
  • salt and pepper, to taste

Instructions

  1. Cook quinoa according to the package and fry bacon slices in a pan.
  2. Meanwhile, chop the apples into bite size pieces.
  3. Once cooked, reserve 2 tablespoons of the bacon grease for the vinaigrette and place bacon on a plate lined with a paper towel while you make the dressing.
  4. To make the dressing, add all ingredients into a small bowl and whisk to combine. Season to taste with salt and pepper as desired.
  5. Combine all salad ingredients together and toss to mix. Add dressing and toss again to coat.
  6. Serve immediately and enjoy!
