Growing up I didn’t care much for salads. Of course when I thought “salad” when I was growing up I thought of iceburg lettuce with some shredded carrots and cucumbers, talk about boring! As I’ve gotten older I’ve turned into a full-fledged salad lover! I love coming up with new flavor combinations to keep them interesting and my absolute favorite go-to recipe is this Summer Berry Walnut Salad with yummy Balsamic Vinaigrette!
I love salads with a hint of sweetness and this time of year, with blueberries and strawberries in abundance, it’s the perfect time to add them to some nutrition-packed spinach and top with crunchy walnuts and creamy feta cheese.
