Indulge in these delicious, decadent caramel fudge brownies topped with a sweet homemade caramel sauce!

Confession: I made these brownies for my family the other night and had to immediately package up the leftovers to send to work with my husband because they were just SOOOO good I knew I was going to eat them all if I didn't get them out of the house! These easy caramel brownies are the perfect combination of rich, fudgy chocolate with sweet ooey-gooey caramel, and they whip up super fast, I just know you're going to love them as much as I do!
Brownie Ingredients:
- 12 tablespoon butter, melted
- 1 ½ cup sugar
- ¾ cup cocoa powder
- 2 eggs
- ½ cup whole wheat flour (you can use all purpose as well)
- 2 teaspoon vanilla extract
- 9 oz bag Chocolate Chips
Ingredients for the optional caramel topping:
- ⅓ cup sugar
- 2 tablespoon butter
- 2 tablespoon heavy cream
- kosher salt
You can make this recipe with or without the caramel topping-the secret ingredient Delightfulls Caramel Filled Chocolate Chips add plenty of caramel flavor to the brownies so if you're taking these to a gathering I'd leave the caramel topping off...if you're serving at home and want to get fancy then by all means, drizzle it on!
Directions:
To make the brownies preheat the oven to 350 degrees. Spray an 8 by 8" glass pan with nonstick spray or line with parchment paper. Combine melted butter, eggs, and vanilla in a large mixing bowl and stir with a rubber spatula until combined. Add in the remaining ingredients and stir well, batter may be a bit lumpy. Pour into your baking dish and bake for 40 minutes or until a toothpick stuck in the middle comes out clean. Allow to cool an hour before slicing.
To make the optional salted caramel topping pour sugar into a small saucepan and heat over medium high heat. Sugar will start to melt, stir often as it liquifies. When the sugar reaches the color of almond skin (light brown) add butter (it will sizzle and bubble-this is okay!) and cream. Stir until blended and remove from heat. Stir in a pinch of kosher salt if desired. Allow to cool for 30 minutes before drizzling over brownies.

I made these yesterday. They are soooo yummy. However, the caramel sauce was not so easy to make for me, and I'm an experienced baker. It took 3 tries, one melted plastic spoon, and a seriously burned finger to get a good batch of caramel sauce. I think I'm going to use commercial caramel sauce from now on.
