I don’t know about you but weeknights at my house are crazy! I’m constantly on the look for new weeknight meals that go beyond my boring staples and aren’t labor intensive to prepare. 

When I was brainstorming I came up with the idea for Bacon Jalapeño Egg Rolls using cream cheese and bacon, inspired by my bacon wrappe jalapeño poppers and jalapeño popper chicken recipes. Y’all-they were so good I had to share the recipe with you!

Why I love this recipe

These Bacon Jalapeño Popper Egg Rolls were super easy to whip up quickly on a weeknight (and filling enough to make a meal of) or they could easily be served as appetizers or finger food for the football game on the weekend! Best of all, they only require four ingredients!

Ingredients

  • bacon
  • cream cheese
  • jalapeños
  • egg roll wrappers

Step by step

  1. Cook the bacon and let it cool, then chop coarsely.
  2. Deseed and chop the jalapeño peppers.
  3. Mix bacon, jalapeños, and cream cheese in a medium bowl.
  4. Place about 2 tablespoons of the cream cheese mixture in the middle of an egg roll wrapper and roll up, folding in the sides as you roll.
  5. In a large skillet, heat oil over medium high heat. Fry each egg roll for about 2 minutes or until golden brown on the outside. Remove to a paper towel lined plate.
  6. Serve hot.

Ingredients

• 8 oz cream cheese, softened
• 12 oz bacon, cooked and finely chopped
• 3 large jalapeño peppers, deseeded and finely chopped
• egg roll wrappers
• oil to fry egg rolls in


Instructions

  1. Combine cream cheese, jalapeños, and bacon in a food processor and pulse until fully blended.
  2. Spread about 2 tablespoons of cheese mixture on egg roll wrapper and roll up.
  3. Heat 1/2″ oil in a skillet over medium heat and carefully add egg rolls, seam side down. Flip when golden, about 2 minutes. Fry an additional 2 minutes and remove to a paper towel-lined tray.
  4. Serve immediately.

Notes

These can also be made ahead of time and reheated for 12 minutes in a 400-degree oven.
